minced 2 garlic cloves,
1 tablespoon olive oil

Instructions
Prepare the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken breasts and cook for 5-6 minutes per side until browned. Remove the chicken from the pot and set it aside.
Sauté the Vegetables: In the same pot, add the diced onion, sliced carrots, and celery. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for another minute.
Simmer the Soup: Pour in the chicken broth, add the bay leaf, dried thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10 minutes.
Cook the Noodles: Add the egg noodles to the pot and cook for another 7-8 minutes until they are tender.
Shred the Chicken: While the noodles are cooking, shred the cooked chicken breasts into bite-sized pieces using two forks.
Combine: Return the shredded chicken to the pot and stir to combine. Let the soup simmer for an additional 5 minutes to allow the flavors to meld together.
Serve: Remove the bay leaf, taste, and adjust seasoning as needed. Ladle the soup into bowls and garnish with fresh parsley.
