Banana Oat Muffins

Ingredients for Banana Oat Muffins

1 cup whole oats (rolled or quick oats)

1 cup whole wheat flour (or almond flour for a gluten-free option)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

3 ripe bananas, mashed

1/4 cup honey (or maple syrup)

1/4 cup coconut oil, melted

1 large egg

1 teaspoon vanilla extract

1/2 cup Greek yogurt (or dairy-free yogurt for a vegan option)

Optional add-ins: 1/2 cup chopped nuts, chocolate chips, or dried fruit

Instructions:

Preheat Oven:

Preheat your oven to 350°F (175°C).

Line a muffin tin with paper liners or grease with cooking spray.

Prepare Dry Ingredients:

In a large mixing bowl, combine the oats, whole wheat flour, baking powder, baking soda, salt, and cinnamon.

Stir until all the dry ingredients are well incorporated.

Mix Wet Ingredients:

In another bowl, mash the ripe bananas until smooth.

Add the honey, melted coconut oil, egg, vanilla extract, and Greek yogurt to the mashed bananas.

Mix until the wet ingredients are well combined.

Combine Wet and Dry Ingredients:

Pour the wet ingredients into the bowl with the dry ingredients.

Stir gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

Add Optional Ingredients:

If you’re adding any extras like nuts, chocolate chips, or dried fruit, fold them into the batter.

Fill the Muffin Tin:

Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Bake:

Place the muffin tin in the preheated oven.

Bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Cool:

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes.

Transfer the muffins to a wire rack to cool completely.

Serving Suggestions:

Enjoy these Banana Oat Muffins warm, with a spread of almond butter or a drizzle of honey.

Pair with a cup of coffee or tea for a complete breakfast.
