  • 500g beef sirloin or tenderloin, thinly sliced into strips

  • 1 large onion, finely chopped

  • 250g mushrooms, sliced (button or cremini)
  • 1 tablespoon flour
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 teaspoons Dijon mustard
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 tablespoon Worcestershire sauce
  • 300g egg noodles or pasta of choice
  • Fresh parsley, chopped (for garnish)

Instructions to prepare Creamy Beef Stroganoff Recipe

Prepare the beef:

  • Pat the beef strips dry with paper towels. This helps with browning. Season the beef with salt, pepper, and paprika.

Sear the beef:

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the beef strips in batches to avoid overcrowding the pan. Sear for 2-3 minutes until browned on all sides. Remove the beef from the skillet and set aside.

Sauté the onions and mushrooms:

  • In the same skillet, heat another tablespoon of olive oil. Add the chopped onion and sauté for 4-5 minutes until softened. Add the minced garlic and cook for 1 minute, until fragrant.
  • Add the sliced mushrooms and cook for another 5-6 minutes until they release their moisture and begin to brown.

Create the sauce:

  • Sprinkle the flour over the onions and mushrooms, stirring to coat everything evenly. Cook for 1-2 minutes to eliminate the raw flour taste.
  • Slowly pour in the beef broth, stirring constantly to prevent lumps. Add the Dijon mustard and Worcestershire sauce. Bring the mixture to a simmer and cook for 5-7 minutes, until the sauce thickens slightly.

Add the sour cream:

  • Lower the heat and stir in the sour cream, mixing until the sauce is smooth and creamy. Taste and adjust the seasoning with salt and pepper if needed.

Return the beef to the skillet:

  • Add the seared beef strips back into the skillet, along with any juices that may have accumulated. Stir to coat the beef in the creamy sauce and cook for an additional 2-3 minutes, just until the beef is heated through.

Cook the noodles:

  • While the beef is simmering, cook the egg noodles or your preferred pasta according to the package instructions. Drain and set aside.

Serve

Spoon the beef stroganoff over a bed of warm noodles and garnish with fresh parsley. Serve immediately for the best texture and flavor.
