Easy Sheet Pan Salmon with Asparagus and Cherry Tomatoes

Ingredients for Sheet Pan Salmon Recipe

  • 4 salmon fillets (about 6 oz each)
  • 1 bunch asparagus, trimmed
  • 1 pint cherry tomatoes
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, sliced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tsp dried oregano (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Prepare the Vegetables:
    In a large bowl, toss the asparagus and cherry tomatoes with 1 1/2 tablespoons of olive oil, minced garlic, salt, and pepper. Spread them out evenly on the prepared baking sheet.
  3. Season the Salmon:
    Place the salmon fillets on the baking sheet, skin-side down, among the vegetables. Drizzle the remaining olive oil over the salmon and season with salt, pepper, and dried oregano if using. Top each fillet with a slice of lemon.
  4. Roast the Salmon and Vegetables:
